Well the last time I found myself at a hick party (mind you I don't make a habit of that lol) they were roasting an entire pig! No food here at this party? Drinks maybe? At least the music is good.

At least the music is good. ohhhhhh The Hog roasts, dig a good hole, put a bar through the hog and set it on tripods...Good times We're gonna roast us a hog too, fry us up a stringer of Catfish, not a one of em over two pounds, big pot of Jambalaya, Mud Bug pie, and some fillet Gumbo... We'll put some Bud ice on ice, and I'll get us some fruit jars to drink some o' my uncle good ol moonshine in!...Now THATS a party!

Well aside from I have no clue what Mud Bug pie is....not really sure I wanna know...it sounds pretty damn good. Mudbug = Crawfish aka Craw dads Pie dough enough for 4 individual pies (or 2 large) 1 - 1/2 cups crawfish tails; crawfish fat and water to make 2 cups 3 tablespoons cooking oil 1 medium onion, chopped fine 2 tablespoons butter 1/4 cup chopped celery Salt and red pepper to taste 1 clove garlic, mashed Pinch thyme 1/3 cup tomato sauce mixed with 1/3 cup water Pinch nutmeg 1 tablespoon green onion 4 tablespoons cornstarch 1 tablespoons parsley INSTRUCTIONS Cook onion, celery, and garlic in cooking oil, stirring until tender. Dish out half the cooked mixture. To the mixture, add tomato sauce, water, and crawfish fat, cook over medium heat and when it boils, slowly add cornstarch and water stirring until sauce thickens, season with nutmeg, thyme, red pepper and salt to taste; set aside. To the remaining cooked onion mixture in a saucepan add crawfish tails, butter, cook 2 to 3 minutes. Combine sauce, crawfish, green onion and parsley. Cook, then pour into 4 pastry lined pie plates, equally divided. Wet edges of under crust, cover with uppercrust. Press edges together; prick with a fork. Bake in a 450 degree preheated oven 5 minutes; reduce heat to 400 degrees and bake about 15 minutes longer. COOKING TIP: Be a guest at your own party and prepare these ahead and chill before baking. another recipe 1 med. to large onion 3 stalks of celery 6 to 8 cloves of garlic 1 can of cream of mushroom soup 1 can light or regular evaporated milk 1 pound of crawfish tails 5 tablespoons of cornstarch pie crust for 2-crust pie PREPARATION: Preheat oven to 350°. Sauté onions, celery and garlic in butter or olive oil. Add milk and soup; bring to medium boil. Add crawfish, bring to medium boil again then add corn starch. Lower heat and cook for another 10 minutes or until thick. Grease pie shell w/butter and place pie shell in bottom of pan then add thickened mixture. Put on top shell and bake at 350° for 20 minutes.

My mother confirmed that they are basicly unattainable around here. She had never heard of Mud Bug pie either.

They are more like shrimp. But if ya fry up some small trout, the tails are crunchy and good. Like potato chips kinda lol.
